Gluten-Free Vegetarian Fritters

Made with the Eat to Live mix

I often order supplements and nut butters from Faithful to Nature, and they included a sample of a vegetarian ingredient blend with my last delivery. The Eat to Live mix consists of chickpeas, sunflower seeds, pea flour and other ingredients. (In case you were wondering, the answer is no; they didn’t pay me to write this.)

 

I’m not a vegetarian, but I decided to stick to that theme as I tried out this mix. I invented something that includes eggs, a bit of almond flour, a handful of extra sesame seeds, some fresh herbs and a few other things. I fried my fritters in ghee.

 

My first batch were boring and breadlike, but they tasted OK with ghee and fig preserve. My next batch were made with the same mix, but with chopped mushrooms added. They were perfect.

 

PS: A friend subsequently pointed out that the ‘gluten-free’ only counts if you’re not concerned about the possible micro-traces of gluten that could be present due to cross-contamination in the oats. That’s a concern for people with coeliac disease, but not for me.
